Thịt kho tàu — the Tết braised pot

Thịt kho tàu (braised pork belly) was essential in the old Northern Tết table. A pot of pork belly braised with eggs, coconut water, fish sauce, and sugar glazed thick. The aroma filled the house every Tết season.

Ingredients

Pork belly

Pork belly (ba chỉ) was chosen with even layers of lean and fat. Fresh, cut into bite-sized squares. Marinated with fish sauce, sugar, and pepper.

Eggs and coconut water

Chicken eggs were hard-boiled and peeled. Fresh coconut water served as the braising liquid, creating natural sweetness and a beautiful amber color.

Braising method

Caramel coloring

Sugar was melted in a dry pan until dark brown to make caramel coloring (nước màu). This gave the pork a golden-amber sheen.

Slow braising

Pork was layered in the pot with coconut water, fish sauce, and caramel. Simmered on low heat. The meat softened gradually, the liquid reduced to a thick glaze. Eggs were added to absorb the color.

The Tết table

A Tết essential

The braised pork pot was prepared from the 28th–29th of the last lunar month. Eaten throughout Tết with pickled onions and bánh chưng. Each reheating made the pork richer, more deeply flavored.

Tết memories

The aroma of braised pork was the smell of Tết. Many who lived far from home missed Tết because they missed the fragrant braised pork filling the kitchen.

Northern

Northern style was less sweet, more savory. Coconut water used moderately. More fish sauce than sugar.

Southern

Southern style was sweeter, richer coconut flavor. Sweet-savory balance in the Southern manner. Both delicious but distinctly different.
