Vòng village — birthplace of cốm

Vòng village (now part of Cầu Giấy district, Hanoi) has been famous for the cốm craft for hundreds of years. Vòng villagers grew a special golden-flower sticky rice variety, harvesting the young rice when the milky grain was just setting, then roasting and pounding it into flakes.

Harvesting young rice and roasting

Sticky rice was harvested when the grain was barely past the milky stage, not yet fully ripe. The grains were stripped and gently roasted over low heat until they cooked slowly without burning. This was the step requiring the most experience — too much heat burned the grains, too little left them raw.

Pounding and sifting

After roasting, the grains were gently pounded with a wooden pestle to remove the husks and flatten them. They were sifted to separate the husks, leaving bright green cốm flakes. The pounding and sifting process was repeated many times until the cốm reached the desired flatness and fineness.
