Tương bần — the most ancient condiment of Northern Vietnam

Tương bần (fermented soybean paste) was one of the most ancient condiments of Northern Vietnam. The paste was made from fermented soybeans, sun-cured for months until it developed its distinctive aroma. Origins and history

Bần Yên Nhân paste

The most famous tương bần came from Bần Yên Nhân village (Hưng Yên province). The people there have been making paste for generations, passing the craft from one generation to the next. Bần Yên Nhân paste was considered the finest in all of Northern Vietnam.

Paste in meal culture

Tương was an indispensable condiment on old Northern Vietnamese dinner tables. "Rice with tương" was the quintessential image of a humble but complete meal. The dipping bowl of tương placed in the center of the meal tray was the soul of the meal.

Traditional paste-making process

Soybeans and sticky rice

Soybeans were roasted until golden and coarsely ground. Sticky rice was cooked and left to develop natural mold. These two components were mixed together with salt and water, then placed in earthenware jars.

Sun curing

The paste jars were placed in the courtyard under the sun, covered with cloth mesh. During the day, the lids were removed to catch the sun; at night, they were covered again. The curing process lasted 2–3 months, with daily stirring. The paste was ready when it turned reddish-brown with a distinctive fragrance.

Tương bần had a very special salty-sweet taste — not harshly salty like fish sauce, not cloyingly sweet like sugar, but a rounded salty-sweetness from the natural fermentation process.

Tương was also used to braise fish, braise meat, and make soup. The salty-sweet flavor of tương enriched dishes. Bún đậu mắm tôm (noodles with tofu and shrimp paste) also used tương as a dipping sauce.
